One-Pot Zesty Kale and Almonds Pasta

Winter's coming, and as the evenings get darker and colder, it's much harder to find the motivation to cook up a storm in the kitchen. Too often, quick and easy wins over the more elaborate dishes that warm our hearts and souls. Worry not, however; this one-pot pasta recipe has got you covered. Not only can this delicious dinner be whipped up in minutes, but you'll also be able to cope with the washing up afterwards—because all you'll need are a few bowls and one pot or pan.
From colour to texture to flavour, this creamy and comforting pasta dish is sure to win over all of your favourite gourmands. It's versatile too, as you could substitute in any veggie you have hiding in your fridge or pantry—think broccoli florets, spinach leaves, rocket, or cherry tomatoes, to name a few.
No longer are delicious dinners reserved for sunny days or only available in the confines of a restaurant. All you need is this recipe, a handful of fresh ingredients, and the commitment to make it happen.
Ingredients
320g macaroni pasta or any pasta of your choice
150ml pure cream
2 cloves garlic, finely chopped
Juice and zest of a lemon
60ml (1/4 cup) extra virgin olive oil, plus extra to serve
Pinch of dried chilli flakes
Large pinch of sea salt
600ml boiling water, use your kettle to save time
150g or about half a bunch of Tuscan kale, roughly torn into small pieces
50g (1/3 cup) toasted almonds, roughly chopped
70g parmesan cheese, grated, plus extra to serve
Directions
Place all the ingredients into a large deep-sided pot, except for the almonds and parmesan cheese. Stir gently to combine. Bring to a boil, reduce heat to medium and cover with a lid. Cook for 8 minutes or until the pasta is almost al dente—if you're using a different type of pasta, it may need less or more time.
Remove the lid and stir through the almonds and parmesan cheese, and continue to cook until the pasta is al dente and the sauce is thick and creamy. If the sauce has dried up too much, add water. Keep in mind that pasta continues to absorb heat even after taking it off the heat, so keep some water aside for adding.
Serve with extra parmesan and a drizzle of olive oil if desired. And there you have it: a delicious dinner in almost no time!
