One-Pan Pineapple Chicken Fajitas

This is another one pot dish , delicious 😋 and really easy.

Ingredients​

  • 2 tablespoons vegetable oil
  • 3 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 700g chicken tenderloins, halved lengthwise
  • 1 large red onion, halved and sliced
  • 1 large red capsicum, cut into 1/2-inch strips
  • 1 large green capsicum, cut into 1/2-inch strips
  • 2 cans unsweetened pineapple pieces drained
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 12 corn tortillas (6 inches), warmed
  • Optional: sour cream, shredded tasty cheese , sliced avocado and lime wedges

Directions​

  1. Preheat oven to 210°C 190°C fan-forced. In a large bowl, mix first 5 ingredients; stir in chicken. Add onion, red n green capsicum, pineapple, honey and lime juice; toss to combine. Spread evenly in 2 greased 15x10 in. baking pans.
  2. Roast 15 minutes, rotating pans halfway through cooking. Reduce heat to 180°C 160°C fan-forced cook for a further 15 minutes and rotate half way through
  3. Serve in tortillas, with toppings, dob of sour cream tomato, avocado ect and lime wedges as desired. ( I don't use lime wedges but my son does)
