My Grandmother was taught how too cook the perfect omelette by her mother inlaw.
I have made it this way and with no doubt it is the perfect omelette.
See at the bottom for variations.

4 tablespoons milk

1 . Separate the egg yolks and egg whites.
Beat egg yolks until light in colour, add the milk, salt and pepper and beat until completely combined.

2. Beat egg whites until stiff , the fold and cut into the yolk mixture.

3. Heat the frypan , add butter and melt.

4. pour egg mixture into pan and turn stove down to low..

5. Cook slowly ( this is where I normally put a lid on but nan didnt )

6. Turn omelette over after 5 minutes then put into a preheated oven 170deg and cook for further 5 minutes. ( this is my grandmother'srecipe but I would change it here and not put in oven I would just add a lid and cook on low for 3 minutes.

That just came flooding back to me that's how my grandmother used to make omelets way back when she lived with us in the 1960's I had forgotten all about them thanks Suzanne I will be making them tomorrow

this is the way I learnt to do omelettes in the 80s and still make them this way - the recipe was from a recipe book from the 60s

All I know is that they are old recipes. My grandmother had this book when I was very young and I think before I was born 1961.
Some are very hard to read . It's in a book hand written

I would have thought most ladies would have their mother/grandmother's old recipe books. I have a large box full of them!
That may be the case sometimes, but when my wife's mother passed her sister & brother -in- law got into her unit first, got what they wanted & we then chose what we wanted. Entering her living room, old 78 records were strewn across the room, a sign of someone sorting through them. She was a seamstress & other items were also missing. When my mother died l suspect those books went to my young sister.

When my grandma died my uncle (1 of 10 children) got into her home first & took what he wanted. Arrangements were made for other family members to be there at a particular time. On arrival the statement was, "help yourselves to what you want, I've already got what l want".
