I remember my grandmother making these when I was little and serving it with icecream. I've made these a few times and my kids loved them.
Ingredients
Batter
1/2 cup of plain flour
1 tablespoon of melted butter or oil
225 mls of water
2 egg whites
3 to 4 banana's cut in half lengthwise
Oil for frying ( I use vegetable oil)
Method
Batter
1. Sift flour into a bowl, make well in the middle and pour in the melted butter or oil
2. Gradually whisk in the 225mls of water.
Whisk thoroughly to make a smooth batter. Set aside for 30 minutes
3. Beat egg whites until stiff peaks form. Then gently fold into the batter just before cooking
4. Heat oil in a frypan
4. Dip the banana's into batter and fry two pieces at a time in hot oil . Cook until golden , then take out and put on a plate until the rest is done.
5. Sprinkle sugar on top , this is Step is optional. Serve with a scoop of icecream
