These are so easy and cheap and Tender juiciness!

Serve with wraps and salad and a drizzle of Tzatziki or on a bed of rice and a Garden Salad

Ingredients

700g chicken mince
A drizzle of olive oil
1 whole onion - grated
3 gloved garlic - grated
1 grated carrot
1/2 cup breadcrumbs + more if needed
1/2 cup chopped mint
1/4 cup chopped parsley
1 tsp dried oregano
Salt and pepper to taste

Method
1.Combine all ingredients into a bowl and work well. Add more breadcrumbs as needed of the dough is too wet to roll. Roll tablespoon amounts into small balls
2. Drizzle a generous amount of olive oil into a pan and fry in batches on medium to hugh temperature.
3. Constantly moving the balls around in the pan which will ensure even browning on the outside. Takes about 10 to 12 minutes to cook
