No Knead Wholemeal Soda Bread Great for Diabetics

A great recipe for Diabetics but please remember I'm only a home cook and not a dietician.

Serves 16
  1. Low Fat
  2. Healthy carb
  3. Low Sodium

Ingredients​

2 cups wholemeal flour
1 teaspoon baking powder
1/4 cup flaxseed meal
1/2 teaspoon bi carb soda
1/4 cup millet meal (millet flour)
1 teaspoon caraway seed, crushed
2 tablespoons wheat gluten
1/4 teaspoon salt
1 1/4 cup buttermilk or skim milk
2 egg whites

Directions​

Heat oven to 180 C 160 C fan-forced.

1. In a large bowl, sift together dry ingredients.

2. In a separate bowl, combine milk and egg whites. Mix well. Add milk and egg mixture to dry ingredients. Mix until well-moistened.

3. Lightly grease the bottom of a 5-by-8-inch loaf pan. Place the dough in the pan. Using a sharp knife, make a slash in the dough lengthwise, about 1/4 inch deep.

4. Bake for 50 to 60 minutes. To test for doneness, insert a skewer or knife into the center of the loaf. It should come out clean. Cool thoroughly on a rack before slicing.
