Christmas is just around the corner and as alot of budgets are tight this year I want to share a couple of recipes that make amazing gifts for neighbours and friends . Just add too a small bag and tie with ribbon

You can roll these in more crushed nuts, sesame seeds or even sifted cocoa powder.

INGREDIENTS
Replace caster sugar with maple syrup, honey or coconut sugar if you are avoiding refined sugar, but be aware your balls won’t be quite as snowy white.
The coconut centres become very hard in the fridge, so remember to bring them back to room temperature before serving

Date n Coconut Balls
Ingredients- 3 cups desiccated coconut
- 2 cups pitted dates
Method
- Place 2 cups of coconut and the dates into a blender or food processor.
- Process on high speed for 3-4 minutes, pausing to scrape down sides as needed.
- Remove from processor and roll teaspoon-sized balls. Roll in remaining 1 cup of coconut.
- Pack in portions for snacks, to put in lunch boxes and keep on hand to satisfy a sweet tooth in a healthy way.
NOTES
The coconut in this recipe turns to cocoa butter as it is processed with the dates and binds them together.You can roll these in more crushed nuts, sesame seeds or even sifted cocoa powder.

No Bake Coconut Snowballs
Makes 15INGREDIENTS
- 1 1/2 cups desiccated coconut
- 2 tbs coconut oil
- 1 tbs caster sugar
- 1 tsp vanilla extract
- 100 g white chocolate buttons
- 1/4 cup cream
- 1 cup desiccated coconut *extra
- 1 pinch salt
Method
- Place coconut and coconut oil in the bowl of a food processor, and process for 2-3 minutes until it becomes a thick paste. Add sugar, vanilla and a pinch of salt, and blitz to combine.
- Form into small balls and place in the fridge.
- Meanwhile, make ganache by melting the white chocolate with the cream in a bowl over a saucepan of simmering water. Alternatively, you can use the microwave. Allow to cool slightly.
- Remove coconut balls from fridge and dip in ganache, then roll immediately in extra coconut. Refrigerate to set completely.
NOTES
