No Bake Berry Passionfruit Cheesecake

If your a lover of Cheesecake and fruit then this one's for you.

Serves 16

Preparation time ; 30 minutes plus standing and refrigeration time

Ingredients:

250g plain biscuits crushed
150g butter melted
500g cream cheese softened
395g can sweetened condensed milk
3/4 cup thickened cream
2 1/2 tsp gelatine
2 tbsp hot water
1/2 cup passionfruit pulp about 6 passionfruit or use one can of pulp.
1 1/2 cups frozen raspberries thawed
1/2 cup boiling water
1 tbsp caster sugar
1 tsp gelatine extra

Method:

1. Combine crushed biscuits and butter, mix well. Press into base and sides of greased 24cm springform pan. Refrigerate while making the filling.

2. Using an electric mixer or food processor, beat cream cheese, condensed milk and cream until thick and creamy; Dissolve gelatine in water ; add to cheese mixture beat well ; add passionfruit; pour mixture into prepared pan and refrigerate until almost set . Allow 2 to 3 hours

3 . Meanwhile, push raspberries through a sieve; discard seeds. Place puree into a medium bowl. Combine water, sugar and gelatine in a small jug / bowl; mix until gelatine dissolves; pour over puree and mix well.
Strain through a sieve over cheesecake this will remove the foam.
Chill until set

NOTES :
To keep price down use homebrand products eg plain biscuits, butter

Use fresh passionfruit when in season and cheapest otherwise replace with 1 can of passionfruit
