Leah Itsines is a 27-year-old home cook and mum from Adelaide who loves sharing her simple yet delicious recipes on Instagram. In one recent post, Leah shared her top tips for cooking the perfect steak.

‘Steak is a tough one to be confident in cooking, but I promise once you get the hang of it, it’s easy!’ She captioned.



To start, Leah makes sure that the pan is hot enough to caramelise the meat. Then she seasons her steaks (she used Porterhouse in her video) with olive oil, salt, and pepper before popping them in the hot pan.

As she flips each piece of meat over during cooking, she adds extra flavour by drizzling them with thyme, garlic, or butter. But if you want a lighter flavour, Leah suggested squeezing lemon juice on them instead.

If you want to make sure that the steak is cooked to your preferred level of ‘doneness’, Leah said to follow these rules:
  • For a rare steak: cook the meat for two minutes on each side.
  • For a medium steak: cook the meat for three minutes on each side.
  • For a well-done steak: cook the meat for four to five minutes on each side.
Leah advised people to ‘feel the steak with your utensils’ and take note of the ‘springiness’ of the meat. She said this will help people get used to identifying when their steak is cooked instead of using timers.

Then, she removes the steak from the pan and allows it to rest for a few minutes, before serving it with mushroom sauce. Although gravy, garlic sauce or red wine sauce would also work.

  • 2 tbsp. unsalted butter
  • 1/2 tbsp. olive oil
  • 300g /10 oz. mushrooms, sliced
  • Pinch of salt and pepper

  • 1/4 cup (65 ml) white wine or rose, dry
  • 1/2 cup (125 ml) chicken or vegetable broth
  • 1 cup (250 ml) heavy/thickened cream
  • 1/2 cup parmesan, finely grated
  • 2 tsp fresh thyme leaves (or 1/4 - 1/2 tsp. dried)

It's the resting of the meat before eating that makes it tender. I have always cooked my meat (rare to medium) plated up and eaten - the meat has always been a bit hard to chew. But now my son gets me to rest the meat on a separated plate (cover with foil) for at least 2 mins, then plate up. Yes, the meat is still hot but now it so easy to chew and the overall flavour is so much better. Sometimes we season sometimes we don't.
