Mum-of-two’s genius recipe that transforms leftover bread crusts into tasty jam rolls

Do your grandkids tend to avoid the crust of their sandwiches? There’s always a way to minimise daily food waste and this Irish mum just killed it with an innovative idea that transformed crust leftovers into tasty treats instead!

Food writer and cookbook author, Ciara Attwell, aims to look for different and new ways to make food extra enjoyable for kids. The mum-of-two claims to specialise in ‘fussy eating’ and is the woman behind the blog ‘My Fussy Eater’ which started in an attempt to get her fussy eating daughter to get accustomed to a variety of dishes in a positive light.

The innovative queen happily shares multiple recipes in her blog for other mum’s to try. Recently, she shared how she reuses crusts to make fruit scrolls that only need a handful of ingredients, on Facebook.

To create the rolls, she starts by cutting off the crust from a slice of bread and then deciding on a fruit jam to use. You’re more than welcome to use your personal favourite jam if you’d like to give this a shot! There is no wrong answer.

Then, she proceeds to scoop a generous amount of jam, spreads it onto the inside of the crust. She follows this by rolling up the crust until it resembles a classic cinnamon scroll.

Ciara then sticks a skewer up the base and dabbed a small amount of butter on each side of the scroll. Afterwards, she gently places the treats on a tray that’s lined with foil and pops it into the oven for about 10 minutes at 180 degrees.

Sounds pretty easy right? The fruit scrolls came out toasted and ready to eat as a fun, light snack. Ciara’s recipe is completely customisable with just about any spread you can think of. You can even go all the way and make a cinnamon scroll version of this!




The food blogger’s Facebook video has gained over 1,700 reactions and over a hundred comments. Mums absolutely love the clever idea and are praising her for it.

“I always throw my crusts out! Guess I'm never doing that again, will definitely give this a try,” one mum wrote.

“You’re making me want to cut all the crusts off my bread lol” another adds.

I asked kids in my classes if they ate crusts of bread: more than half didn't. I asked them how they get on with the crusts on burgers! It was usual for the rest of the class burst out laughing! :)
