Mild Curry Beef Stew

I've had a few people ask for curry recipes and the first one I'm posting is an easy mild curry beef stew.
If you like it strong just add more curry .

Ingredients​

  • 1kg chuck steak ect I have also used rump steak cut into 1- to 1-1/2-inch pieces
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons plain flour
  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 1 tablespoons curry powder
  • 2 teaspoons soy sauce
  • 2 bay leaves
  • 3 cups beef stock
  • 3 medium to large potatoes, cut into 1-inch cubes
  • 2 large carrots, thinly sliced
  • 1 tablespoon white vinegar

Directions​

  1. Sprinkle beef with salt and pepper; toss with flour. In a heavy based pan, heat oil over medium heat; cook beef and onion until lightly browned, stirring occasionally. Stir in curry powder, soy sauce, bay leaves and stock; bring to a boil. Reduce heat; simmer, covered, 45 minutes.
  2. Stir in potatoes and carrots; return to a boil. Reduce heat; simmer, covered, until meat and vegetables are tender, 2-2 1/2 hours, stirring occasionally. Remove bay leaves; stir in vinegar. If desired, serve with plain rice.

You can freeze Curried Beef Stew?​

Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.
