Microwave quiche in a cupNo time to cook? This microwave quiche in a cup is the perfect dish for those looking to whip up a meal in a matter of minutes. This quick and tasty quiche is a modern, fast-paced twist on a classic dish. It’s simple to make and can be tailored to various dietary needs.

Ingredients:
2 eggs
40g (1/4 cup) self-raising flour
50g (3/4 cup) blanched broccoli, coarsely chopped
30g (1/3 cup) sliced ham, torn
1 green shallot, thinly sliced
2 tbsp shredded parmesan
1 tbsp coarsely grated cheddar, plus extra, to sprinkle
1 tbsp parsley
1 cherry tomato, halved

Instructions:

1. Crack the eggs in a large bowl. Mix in the flour using a balloon whisk until thoroughly combined.

2. Add the broccoli, ham, shallot, parmesan, cheddar, and parsley to the egg mixture and stir until well combined. Spoon the mixture into a microwave-safe bowl or mug. Place a tomato, cut side up, on top of the mixture and sprinkle with extra grated cheddar.

3. Cook in the microwave on high (800 watts) for 2 and a half minutes or until the egg is cooked and the quiche is puffed.

4. Allow it to stand for a few minutes before serving.

Optional ways to make it extra special:

- Top with a few slices of smoked salmon after cooking for a delicious twist.
- Sprinkle some chopped fresh chives or spring onions over the top for a burst of colour and flavour.
- Add a few slices of cooked bacon or diced chorizo to the quiche for a smoky flavour.
- Top the quiche with a few slices of avocado for a creamy finish.

I’d use a teaspoon of baking powder and a tablespoon of plain flour in place of the S.R. Flour. Also used these same ingredients to create a savoury slice,replacing broccoli with grated zucchini. Bake in a baking tray,cut into slices,serve with salad. Very yummy!
