A foodie from Melbourne has shared her recipe for a mouthwatering cheese toastie that was able to unite both cheese lovers and vegans alike!
Ashley Alexander, who manages the food blog Gather and Feast, shared her process on TikTok, showing how she made the green-loaded toasted sandwich with ingredients such as feta cheese, broccolini, basil, arugula, and zucchini.

Ashley used the following ingredients:
- 3 stalks broccolini, finely chopped
- ¼ zucchini, finely chopped
- Small handful fresh rocket/arugula, finely chopped
- A few fresh basil leaves, roughly chopped
- Zest of ½ lemon
- 1 small garlic clove, finely grated or crushed
- Roughly 20g of feta cheese, crumbled
- A small handful of grated provolone or another mellow melty cheese
- Salt and freshly cracked black pepper to taste
- 2 slices sourdough bread
- Butter for spreading
Then, she places a frying pan on medium heat and adds a glug of olive oil.
Once warm, she adds the greens, followed by some chopped garlic and the zest of half a lemon.
She sautés the veggies on medium heat until they start to look vibrant green (roughly around 2-3 minutes). Once done, she removes them from the pan and into a bowl, then adds a handful of feta and provolone cheese.
To prepare the bread, Ashley spreads a good amount of butter on two slices of sourdough bread and flips them over, butter-side out.
On one slice, she adds a handful of shredded provolone and tops it with the cheese-and-veggie mixture. Then, she seasons with salt and pepper and places the second slice on top.
She returns the sandwich onto the pan and cooks it on medium heat, about three minutes on each side.
Ashley described the green loaded toastie as “the toasted sandwich you never knew you needed”.
She also suggested using thick sourdough bread for the best results. And if you’re making this for more than one person, you can just increase the amount of greens and cheese you’ll be using.
“If you happen to have any leftover filling, it would also taste delicious baked in a ramekin with an egg or tossed through some freshly cooked pasta,” she added.
Ashley’s video gained a ton of attention from fellow Aussies looking for easy lunch recipes.

Now we did say vegan didn’t we, and last we checked, feta cheese isn’t vegan! Well, a third person suggested in the comments that using vegan feta makes this recipe friendly for the vegetarians out there, and tastes delicious to boot.
