Meatball & Tomato Soup

Are you looking for a hearty soup to warm you up this winter? This meatball and tomato soup is perfect! It's a classic dish that's easy to make and can be tailored to your liking. The soup is traditionally made with beef or pork meatballs, but feel free to use whatever ground meat you have on hand. To make this dish, you will need the following ingredients:
- 400g ground beef or pork
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 egg
- 1/2 cup bread crumbs
- 1/4 cup milk
- 1/2 tablespoon parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 3 cups beef or chicken broth
- 1 can diced tomatoes, undrained
- 1 can tomato sauce
- 1/4 cup chopped fresh parsley
To make the meatballs:
1. In a large bowl, combine ground beef or pork, onion, garlic, egg, bread crumbs, milk, parsley, salt, pepper, and Parmesan cheese. Mix well.
2. Shape mixture into small balls.
3. In a large saucepan, heat olive oil over medium heat. Add meatballs and cook until browned, about 10 minutes.
4. Add beef or chicken broth, diced tomatoes with their juice, and tomato sauce.
5. Bring to a boil. Reduce heat to low and simmer for 30 minutes.
6. Garnish with chopped parsley and serve with bread on the side.
To make this dish extra special, you could try adding different vegetables to the soup, such as carrots, celery, or zucchini. You can also use another type of cheese in the meatballs, such as cheddar or mozzarella. And add spices to the soup, such as oregano, basil, or thyme.
