Make your holiday dinner extra special with this delicious Maple Honey Mustard Glazed Ham. This traditional Australian recipe is a staple for Christmas feasts. It’s easy to prepare, and the glaze adds a sweet and savoury flavour to the ham. The ham is served with a delicious and sticky glaze made from a combination of maple syrup, honey, brown sugar and dijon mustard.
Ingredients:
100g (1/2 cup, firmly packed) brown sugar
80ml (1/3 cup) maple syrup
80ml (1/3 cup) honey
1 tbsp dijon mustard
1 (about 8kg) whole leg ham on the bone
Whole cloves, to stud
Instructions:
1. Place the brown sugar, maple syrup, honey and dijon mustard into a bowl. Stir until well combined.
2. Preheat the oven to 170°C.
3. Line a large baking dish with 2 layers of baking paper. Place an oven shelf in the lowest position of the oven and remove all other shelves.
4. Using a knife, cut around the shank of the ham. Run a knife under the rind around the edge of the ham. Gently lift the rind off in 1 piece, leaving the fat on the ham.
5. Score the fat of the ham in a diamond pattern. Stud each diamond with a clove.
6. Place the ham onto the baking dish. Brush one-third of the glaze over the entire ham.
7. Bake the ham for 1 hour and 30 minutes, brushing with the remaining glaze every 25 minutes.
8. Remove from the oven and allow to rest for a few minutes before slicing and serving.
