Lucy says this tart recipe is a guaranteed ‘crowd pleaser’ for all ages every time she makes it. She begins by taking out 12 mini pre-baked tart shells that she buys from her local supermarket and places them onto a large serving platter.

Then, she scoops a tablespoon of raspberry jam and pushes it to the bottom of each tart shell. The food blogger sets them aside to proceed with making a marshmallow filling.

She grabs about 200 grams of pink marshmallows, drops them into a microwave-safe bowl, and soaks them in 40 grams of cream. Next, she pops the sweet concoction into the microwave at 50 percent power until the mixture melts but she makes sure to stir the ingredients every 10 to 20 seconds.

Lucy warns readers to be careful with the marshmallow mixture as it is extremely hot and sticky once taken out of the microwave due to the high sugar content.

Once the mixture is as smooth as butter, she takes some of the marshmallow filling and places it on top of the jam and into each tart shell. She finishes the tasty treats off by sprinkling desiccated coconut on top.

Lucy mentions that you should store the delicious tarts inside an airtight container to enjoy for up to three days – but that they taste best fresh.

“How good do these look?” wrote a third.
