Lemon Parsley Baked Cod

A delicious recipe which I serve with either steamed vegetables or garden salad

Ingredients​

  • 3 tablespoons lemon juice
  • 3 tablespoons butter, melted
  • 1/4 cup plain flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon lemon-pepper seasoning
  • 4 cod fillets (170g each)
  • 2 tablespoons minced fresh parsley
  • 2 teaspoons grated lemon zest

Directions​

  1. Preheat oven to 200°C / 180°C fan-forced. In a shallow bowl, mix lemon juice and butter. In a separate shallow bowl, mix flour and seasonings. Dip fillets in lemon juice mixture, then in flour mixture to coat both sides; shake off excess.
  2. Place in a baking dish coated with cooking spray. Drizzle with remaining lemon juice mixture. Bake 12-15 minutes or until fish just begins to flake easily with a fork. Mix parsley and lemon zest; sprinkle over fish.

    1 fillet: 232 calories, 10g fat (6g saturated fat), 87mg cholesterol, 477mg sodium, 7g carbohydrate (0 sugars, 0 fiber), 28g protein.

I’m happy to have a meal of vegetables any day/night of the week.

To be fair, @Veggiepatch and I went to a seafood restaurant yesterday and I’m happy for him to eat as much seafood as he likes. Sometimes he has fish & chips at the pub. I have not “prohibited” Veggie to buy fish to cook at our home, but it’s his decision.

I wish I liked fish. I know many fish are quite a healthy dish.
 
Each to his own. One of my pet hates is pumpkin, and I cannot stand oysters, calamari, mussels, tinned tuna and hate tinned sardines due to their strong smell. There are SOME other seafoods, but I love (green) prawns cooked well and a lot of other fish as well as salmon (only cooked or tinned, not raw). With pumpkin I love pumpkin soup (I actually cut it and cook the soup myself!) but just cannot stand the mushy texture of a piece of pumpkin. So as I said - each to his own.
