Lemon and Yoghurt Pancakes

1 cup of greek yoghurt
1 egg
1 teaspoon vanilla extract
1 1/2 teaspoons lemon zest
2 tablespoons sugar
3/4 cup plain flour
1 teaspoon baking powder
20gr butter, melted

In a large bowl, place the yoghurt, egg, vanilla extract, lemon zest and sugar. Mix until combined.
In a separate bowl, sift the flour and baking powder together, then fold it with the yoghurt mixture.
When combined, fold in the melted butter.

I use 1/4 cup of pancake batter.
