Lazy Air Fryer Baked Avocado Eggs

The other day I felt so tired come dinner time that I really didn’t have it in me to cook. I’m also not a huge fan of delivery apps or takeout due to the cost. Luckily, I also have eggs and I happened to have an avocado!



This was my first time trying this recipe and honestly, it’s pretty good! I believe this is marketed more as a breakfast recipe but we’re adults and make our own rules so eat it whenever you like. Though it’s not a hugely filling dinner on its own so I paired it with hot chips (I told you I was feeling lazy) as I could cook them in the air fryer at the same time.

Ingredients:
Avocado
Eggs
Seasonings, Salt & Black Pepper

Instructions
Start by cutting your avocado in half and removing the seed.
Scoop excess avocado out if the seed hasn’t left a large enough hole for an egg.

Break an egg directly into the hole on the avocado. Repeat on the other side. (See image above)
Set your air fryer to 200 degrees C and set the timer for 9 minutes.
At around 5 minutes, start checking your eggs because depending on which air fryer you own, it can go from tasty to rubbery fast.
Serve with herbs, salt, and pepper.

Note: You can get creative and add cheese on top too!
