Layered Christmas pasta salad

’Tis the season for festive treats! If you’re looking for a delicious and healthy dish to bring to your holiday lunches or dinners, look no further than this colourful and delicious Layered Christmas Pasta Salad! It’s easy to make, packed with flavour, and full of festive colours that will delight everyone.
Ingredients:
3 cups dried elbow pasta
2 tsp extra virgin olive oil
4 middle bacon rashers, chopped
1/2 small red cabbage, chopped
420g can corn kernels, drained
2 baby gem lettuces, shredded
2 large tomatoes, diced
1 continental cucumber, diced
3/4 cup grated cheese (500g)
2 green onions, thinly slicedCreamy Mustard Dressing:1/2 cup sour cream
1/2 cup traditional mayonnaise
1 cup flat-leaf parsley leaves, chopped
2 tbsp lemon juice
1 tbsp wholegrain mustard
Instructions:
1. Cook the pasta according to packet instructions. Drain. Set aside.
2. Heat the oil in a large frying pan over medium-high heat. Add the bacon and cook, occasionally stirring, for 5 minutes or until golden and crisp.
3. Make the Creamy Mustard Dressing by combining sour cream, mayonnaise, parsley leaves, lemon juice, and wholegrain mustard in a medium bowl—season with salt and pepper. Stir until well combined.
4. Get a large salad bowl. Put the cabbage in the bottom. Top with the corn kernels, then half of the pasta. Spoon over 3/4 of the dressing. Spread the lettuce over the dressing, then top with the tomatoes, cucumber and the remaining pasta. Spoon over lettuce, then drizzle it with the remaining dressing. Sprinkle with the bacon, cheese and green onion.
5. Season with pepper and serve.
To make this dish extra special, you can add some extra ingredients such as cubed avocado, jalapeno peppers, or freshly chopped herbs. You could also try making a spicier version by adding some chilli flakes or hot sauce to the dressing. If desired, add a drizzle of balsamic glaze to the salad for a sweet and tangy finish.
