Keto Spinach Feta Quiche

The result is a delicate quiche that rivals anything you can get in a restaurant! The flaky crust is made with a combination of almond flour, cream cheese, butter, apple cider vinegar, and a few other ingredients.
If you’re running short on time, you can either make a crustless quiche or premake the crust a day ahead of time. Trust me, the crust tastes so good that it makes the entire quiche taste better.

I suggest eating this for breakfast, brunch, or breakfast for dinner. Serve it with your favourite low-carb breakfast sides.

How To Store A Quiche

This quiche takes about 45 minutes to bake. If you want to enjoy it on a really busy morning, I suggest letting it bake while you finish up other things.

You can also make it the night before and store it in the refrigerator in an air-tight food storage container.
It won’t last very long in the refrigerator – only about 3 day. But it will save you time if you make it the night before

Ingredients​

Keto Crust​

  • 1 1/2 cups Almond Flour
  • 2 ounces Cream Cheese softened
  • 3 tbsp Butter softened
  • 1 large Egg
  • 1 tsp Apple Cider Vinegar
  • 1/2 tsp Italian Seasoning
  • 1/4 tsp Garlic Powder

Quiche Filling​

  • 1 tbsp Olive Oil
  • 1/2 Onion chopped
  • 2 tsp Minced Garlic
  • 4 cups Fresh Spinach
  • 1/2 cup Feta Cheese Crumbled
  • 4 large Eggs
  • 2/3 cup Heavy Whipping Cream
  • Salt and pepper to taste
  • 1/2 cup Shredded Mozzarella Cheese

Instructions​

  1. Heat the oven to 400°F (200°C).
  2. Whisk together the eggs and heavy whipping cream in a mixing bowl. Season with salt and pepper to taste.
  3. Blend together the crust ingredients, and press into a well greased quiche pan.
  4. Heat the olive oil in a skillet over medium heat.
  5. Stir in the onions, and saute until softened.
  6. Mix in the garlic, and saute for another 30 seconds.
  7. Add in the spinach, and saute until wilted.
  8. Let the spinach mixture cool slightly, and then spread over the crust.
  9. Sprinkle with the feta cheese.
  10. Pour the egg mixture over the top.
  11. Cover loosely with foil, and bake for 20 minutes.
  12. Reduce the heat to 350, remove the foil and sprinkle with the mozzarella cheese.
  13. Bake for another 20-25 minutes, or until the crust is browned and the filling is cooked through.

I made this quiche yesterday and I was delighted with it. My only critisim is the different types of measurements used for the ingredients and temperatures - i.e. cups,ozs and reduce oven temps from 200C to 350F
