Kale Soup

1 tablespoon butter

1 small onion, chopped

2 cups chicken broth

1 small tomato, chopped

3 cups loosely packed chopped kale

1 cup canned white beans, rinsed and drained

First, melt the butter in a pot over medium-high heat. Sauté the onions until tender, which should take about 5 to 10 minutes.

Next, stir in the chicken broth and chopped tomato into the onion mixture.


Heat the broth mixture until just about boiling point, and then stir in the kale until it is completely submerged. Cook the kale until it wilts, which should take 3 to 5 minutes, tops.

And lastly, stir the white beans into the soup and cook for about 2 to 3 minutes to ensure they’re cooked through.

That’s it — you’re done! Hooray!

The one food item I just can't eat is Kale. My daughter and son love it but no matter how I cook it I can't stand it.

I agree about the Kale. Love the sound of the rest though so will substitute with spinach and have a go.

My daughter makes a kale salad that she learnt from the chef at the Cafe she works in .

It's raw kale which she washes well and squeezes well. She then adds a little olive oil and massages it for 5 minutes, this she said is the secret to a good kale salad . Then she adds lemon juice and I think chopped tomato and red onion .

I forgot to add my daughter adds it to her green monster shake. I have to say though she is a personal trainer and is entering a weight lifting competition later this year . So maybe it has alot of iron in it.
