Hummingbird Muffins

2 eggs
1/4 cup sugar
200ml vanilla yoghurt
1 teaspoon vanilla extract
3 bananas, mashed
440gr crushed pineapple in natural juice
3 cups S/R flour
2 teaspoons cinnamon
walnut halves
In a large bowl, beat eggs and sugar with a mixer for about 2 minutes until light and creamy.
Lightly mix in yoghurt, vanilla, bananas and pineapple with the juice.
Sift flour and cinnamon then stir to combine.
Spoon 3/4 full into muffins tins, then top with walnut halves. This recipe makes 20 muffins.
Oven 180 degrees fan forced or 200 degrees conventional for 25 minutes - or until cooked in the centre.
