Home-Made Ice Cream

Being retired and having a wife whom I send out to work, the kitchen has become my domain also. As well as the evening meals I also cook Sunday lunches for around 12 regulars who join us after church for some R&R.

I scoured the internet for home-made ice cream recipes and couldn't find one that I liked. So, I experimented myself, and have developed a recipe which all my friends love. It is NOT cheap to make, but it IS easy - and who cares when you can make ice cream which tastes better than the bought stuff!?
I would love to hear any suggestions as to how to make this even better!Ice Cream.jpg

Wow this recipe looks delicious @Big Al! Aside from banana, what fruits do you usually use?

I've used strawberries by using a jar of strawberry jam and then tipping in a few quartered strawberries at the end of mixing - just with a quick blitz. Mangoes also - without the jam and just extra fruit. But they can be a bit juicy - and juicy fruit tends to go icy in the ice cream. Frozen or pulped fruit with corresponding jams are also good. Last week I tried pistachio ice cream - I used too much almond essence - next time don't use any and stick to vanilla essence with the crushed nuts. Going to try Nuttela ice cream one day!

Use ICING SUGAR in place of granulated sugar. It dissolves much faster!

Too expensive. I think I’ll keep buying the $3.00 tub from Aldi.

I always make my own Icecream. Its really easy
300ml thickened cream
1 can condensed milk (Carnation)
1/2 cup sugar
1 teaspoon vanilla essence
I am fortunate to have an icecream maker, but with a bit of work it can be done in a normal freezer.
Place in freezer and when starting to firm around the edges, take out and beat again, do this a couple of times, and you will have lovely homemade icecream.

My mum made one many many years ago that she would beat up two or three times and she used powdered milk in there somewhere. My sisters can't remember the recipe. Maybe it was something concocted through the war.
