Healthy Mexican Fried Rice

Ingredients:
-1 cup brown rice
-1 tbsp olive oil
-1 brown onion, chopped
-1 red capsicum, deseeded, chopped
-2 garlic cloves, crushed
-2 tsp chilli powder
-Can of black beans, rinsed, drained
-Can of corn kernels
-2 tbsp lime juice
-200g grape tomatoes, chopped
-1/4 small red onion, finely chopped
-1 small avocado, quartered, sliced
-125g feta, crumbled
-Fresh coriander to serve
-Lime wedges, to serve
Instructions:
1. Cook rice according to package instructions, then spread onto a large tray and place into the fridge, uncovered, for at least 1 hour. Or, if you have leftover brown rice, you can use that.
2. Heat olive oil in a large frying pan over medium-high heat. Add onion, capsicum, and garlic. Stir fry for 5 minutes or until softened. Then add the garlic and chilli powder and cook for 30 seconds or until fragrant.
4. Add the rice and cook, stirring occasionally, until it is well combined with the onion mixture.
5. Add the black beans and corn and cook for 5 minutes or until heated through.
6. Remove from heat, pour the lime juice, and toss to combine.
7. Combine tomatoes and onion in a bowl—season to taste.
8. Serve the rice mixture topped with avocado, feta, tomato mixture, coriander and lime wedges.
