Healthy creamy Green Weight Loss soup

I've been trying a few healthy and delicious recipes .
This one is for a creamy green nutritious soup.

Serves 4

Ingredients


1 tablespoon of olive oil
2 stalks of celery diced
1 carrot, diced
1 parsnip, diced
1 yellow capsicum, diced
1 onion diced
2 cloves of garlic , chopped
1 tablespoon of grated fresh ginger
4 cups of vegetable stock
1 head of broccoli , chopped
2 cups of fresh spinach chopped
1 tablespoon of miso paste ( available in all supermarkets)
Sprinkle of Sea salt n freshly ground black pepper
1 tablespoon of Greek yoghurt
Chopped coriander or parsley , to serve

Method

1. Heat oil in large pot over medium to high heat . Add celery, carrot, parsnip, capsicum, onion and garlic. Cook , stirring, until onion and garlic is transparent, about 5 minutes.

2. Add ginger and vegetable stock, reduce heat to medium and add spinach and broccoli.cook for about 20 minutes. Add Miso paste and salt n pepper to taste.

3. Using a blender or hand hheld stick blender blend until creamy

4. Ladle the soup into bowls and serve with yoghurt on top. Garnish with chopped corianderor parsley

Serve with fresh bread .

Just been put on steroids, this is for me with a few tweaks and no bread, thanks S/Rose
 
I just finished a course of Prednisone and it actually made me pretty ill, it also raised my sugar levels .

Hope your OK and it's a short term dose 🙂
I hope you have finished that crap, this time mine is Dexamethasone? Thirty days this time? It's funny but ever since the first Chemo back 2012 I haven't been able to eat fresh bread unless it's toasted which is sacrilege, so have to have stale?
 
I love this recipe. Very healthy with all the vegetables and ideal for the cooler season . I made pumpkin soup with carrot , celery , onions , garlic and a small sweet potato , added a lot of spices and herbs , served with crusted bread with cheese on top and toasted under the grill. Will definitely make your recipe and good for the waistline as well. Thank you for sharing this recipe.
