Healthy Coleslaw with A Twist

This is another great healthy salad that keeps for 3 to 5 days.
I had it as a main hubby has a protein with it.

I tried making homemade Sauerkraut . It's suppose to be really good for you. But You need to stir every few days and the smell was horrendous and I threw it out and purchased a ready made jar one
Ingredients
Salad
1 cup of red kidney beans ( I used a small can)
1 cup of chick peas ( I used a small can)
1/2 cup Sauerkraut ( in a jar)
1/2 a small red cabbage shredded ( green is ok )
1 med cucumber
diced
1/2 a small red onion finely chopped
1/2 red capsicum diced
1 medium carrot
grated
Yoghurt Dressing
1/2 cup Greek yoghurt ( I used low fat)
1 garlic clove minced
Juice of 1 lemon
1 Tablespoon olive oil
2 Tablespoons Fresh chopped dill ( you can substitute with parsley or coriander)
Salt n pepper to taste
Method
1. Add all salad ingredients into a bowl.
2. Whisk all dressing ingredients together except olive oil and dill.
3. Once all salad ingredients are mixed together , then slowly pour in olive oil and dill. Gently mix together
