Healthy Carrot Soup

Give yourself a boost and treat yourself to this low-fat, healthy carrot soup. It’s the perfect thing to warm you amid all this rainy weather!

Ingredients

1 tablespoon olive oil
2 1/2 cups chopped carrots
1/2 cup chopped white onion
Garlic clove, minced
1 teaspoon grated ginger
1 tablespoon orange juice
1/4 teaspoon ground turmeric
1 1/2 cups vegetable broth
1/4 teaspoon salt (or more/less to taste)
1/4 teaspoon ground pepper

Method
  1. Prep your ingredients
  2. Heat olive oil in a pan over medium heat. Add onion and carrots and cook for around 8-10 minutes (or until softened). Stir throughout.
  3. Stir through minced garlic and remove from heat.
  4. Add all ingredients (cooled carrots, ginger, orange juice, turmeric, vegetable broth, salt and pepper) to the blender and puree until smooth.
  5. Serve!
You may like to enjoy it with a drizzle of olive oil or some warm bread.
