Healthy Beef Goulash

This is another recipe I recently tried and family loved it and it's healthy too .

Ingredients
2 tablespoons of olive oil
800grams chuck steak cut into cubes
2 onions sliced
1 capsicum
seeded and chopped
3 cloves of garlic crushed or 3 teaspoons of jar garlic
1 tablespoon of paprika
2 Tablespoons tomato paste
1 teaspoonof dried caraway seeds
4 sprigs of thyme
1 Litre of beef stock
2 large carrots sliced
1 tablespoon corn flour or arrowroot flour
Method
1. Heat oil in a large deep saucepan and brown the beef .
2. Remove and set aside. Cook onion, capsicum and garlic for about 5 minutes, add paprika, tomato paste and carawayseeds, cook gor 5 minutes then add thyme and stock.
3. Add meat back to pan along with carrots. Simmer for 3 hours
4. mix the flour with about 2 tablespoons of water and then add to pan and stir. Cook until thickened about 5 minutes
Serve with Mash potato or rice, fresh beans and fresh bread I have previously added a no knead easy bread
