Healthy and Easy Baked Fish

I didn't realise alot of people are afraid to cook fish.
Fish should be a big part of your weekly diet .
This recipe is so easy and so tasty
Serves 2
prep time 10 minutes Cooking Time 15 minutes
Ingredients
2 x pieces of white fish fillets
Juice of 1/ 2 lemon
2 tablespoons olive oil
1 teaspoon tyme leaves fresh or dried
1/2 lemon sliced
1 tomato , sliced
1 small capsicum sliced thinly
1 onion sliced thinly
Pinch of Salt n pepper
2 pieces of baking paper doubled. ( see note)
Method
1. Preheat oven 190 C or 180 C fan-forced
On a baking tray add the baking paper
2. Heat oil in a frypan and add onion , cook until soft but not brown . In a line place the cooked onion in the middle of baking paper.
3. Rinse fish under cold water and dry with paper towel. Place fish on top of onion. Squeeze lemon juice over fish. Sprinkle salt n pepper over fish and sprinkle tyme leaves over the fish.
4. Place lemon slices, capsicum and tomato on top of fish .
5 fold the paper over the fish to make a snug parcel . Place on a baking tray that is lined
with baking paper.
6. Cook in a preheated oven for 15 to 20.

Serve with salad , also hot chips goes well
Notes.
1. Can also be cooked in a baking dish with lid on instead of using paper.
2. I have also used 1 layer of paper and used a brown paper bag for the 2nd layer I just cut the bag down the middle, just makes it interesting and different.
3. You can use any white fish fillets I have also cooked whole fish eg snapper this way , you just need to increase time to around 45 minutes.
When I make whole fish, I lay out one layer of foil and lay one sheet of baking paper on top of foil then add fish on top of baking paper and seal to make a parcel
