Ingredients
- 3 medium carrots , cut into 1/2-inch pieces
- 4 celery sticks , cut into 1/2-inch pieces
- 3/4 cup finely chopped onion
- 1 tablespoon finely chopped fresh parsley
- 1/2 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 1-1/2 teaspoons mustard seed
- 2 garlic cloves, minced
- 600g boneless skinless chicken breast cut into small pieces ( bite size )
- 600g boneless skinless chicken thighs (cut into bite size pieces)
- 3 litres chicken stock
- 1 package refrigerated linguine
- Optional: Coarsely ground pepper and additional minced fresh parsley
Directions
- In a slow cooker or you can cook on stove top on low , combine the first 8 ingredients. Add chicken and stock. Cover and cook on low 5-6 hours or until meat is tender.
- Stir linguine into soup; cover and cook on high until pasta is tender, about 30 minutes longer. If on stove top cook 15 minutes .
- If desired, sprinkle with coarsely ground pepper and additional parsley
