Hazelnut & chocolate cookie sandwiches

Hazelnut and chocolate are a classic flavour combination, and these cookie sandwiches are the perfect treat for adults and kids alike. These cookies are simple to make and are filled with rich chocolate and hazelnut spread for a delicious twist on a classic sandwich cookie.

Ingredients:

150g unsalted butter at room temperature

100g light brown sugar

50g caster sugar

1 large egg

1 tsp vanilla extract

150g plain flour

75g cocoa powder

1/2 tsp baking powder

1/2 tsp bicarbonate of soda

100g hazelnuts, roughly chopped

200g dark chocolate

200g milk chocolate

200g hazelnut spread



Instructions:

1. Preheat the oven to 200C/180C fan/gas and line two baking sheets with baking parchment and set aside.

2. In a large mixing bowl, use an electric whisk to cream the butter with both sugars. Then, add the salt, egg and vanilla extract and beat until well combined. Using a wooden spoon, stir in the flour, bicarbonate of soda, chopped chocolate, and toasted hazelnuts.

3. Scoop the dough onto the prepared baking sheets in 24 heaps, leaving enough space between each cookie.

4. Bake for 10-12 minutes or until the edges of the cookies are lightly golden. Remove from the oven and let the cookies cool completely.

5. Once the cookies have cooled, spread 1 tsp of chocolate hazelnut spread on the bottom half of the cookies, take the remaining cookies and place them on top of the spread-covered ones, forming sandwiches.

To make the cookies extra special, you can sprinkle some chopped hazelnuts and grated chocolate on top of each cookie sandwich before serving. You could also try adding some orange zest to the cookie dough or experimenting with different types of nut butter or chocolate spreads.

You can store these cookies in an airtight container or cake tin for up to five days. Enjoy your delicious homemade Hazelnut & Chocolate Cookie Sandwiches!
