Grilled salmon with roasted vegetables

This recipe is a healthy and delicious way to enjoy your favourite vegetables and to add a little bit of seafood to your diet. The salmon is grilled to perfection and is served with a side of roasted vegetables. This dish is simple to make and can be enjoyed with little to no effort! We’ve written the below recipe so that it serves 4 (just in case you want to make it for two dinners, or a dinner and a lunch) so if you would rather just make two servings, we recommend halving everything OR just cooking less veggies.
Ingredients:
1 onion, chopped
1 carrot, chopped
1 zucchini, chopped
1 capsicum, chopped
1 potato, chopped
1 sweet potato, chopped
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon pepper
4 salmon fillets
1/4 cup lemon juice
1. Preheat the oven to 200 degrees Celsius.
2. In a large bowl, mix together chopped vegetables and olive oil, salt and pepper.
3. Spread the vegetables onto a baking tray and roast for 30-40 minutes, or until the vegetables are cooked through.
5. Meanwhile, grill salmon fillets on a greased grill (or on a frypan) over medium-high heat.
6. Grill for 5-7 minutes per side, or until the salmon is cooked through.
7. Remove from the grill and drizzle with lemon juice.
8. Serve grilled salmon with roasted vegetables.
