Greek Chicken n Rice one Pan Dish

This is two of my sons and a son inlaws favourite chicken. Bonus it's cooked in one pot.

Cook time 50 min

Ingredients​

CHICKEN AND MARINADE​

  • 8 chicken thighs, bone in or out. ( I use thigh fillets)
  • 4 Lemons, use the zest + lemon juice
  • 2 tbsp dried oregano
  • 4 garlic cloves, minced
  • 1/2 tsp salt

RICE​

  • 1 1/2 tbsp olive oil, separated
  • 1 onion, finely diced
  • 1 cup long grain rice , uncooked
  • 1 1/2 cups (375 ml) chicken stock
  • 3/4 cup (185 ml) water
  • 1 tbsp dried oregano
  • 3/4 tsp salt
  • Black pepper

Instructions​

  • Combine the Chicken and Marinade ingredients in a ziplock bag and set aside for at least 20 minutes but preferably overnight. ( I usually marinate from morning)

TO COOK​

  • Preheat oven to 180°C / 160°C fan-forced
  • Remove chicken from marinade, but reserve the Marinade.
  • Heat 1/2 tbsp olive oil in a deep, based pan / dutch oven over medium high heat.
  • Place the chicken in the pan, and cook until golden brown, then turn and cook the other side until golden brown. Remove the chicken and set aside.
  • Pour off fat and wipe the pan with a scrunched up ball of paper towel (to remove black bits), then return to the stove.

  • Heat 1 tbsp olive oil in the pan over medium high heat. Add the onion and sauté for a few minutes until translucent. Then add the remaining Rice ingredients and reserved Marinade.
  • Let the liquid come to a simmer and let it simmer for 30 seconds.

  • Place the chicken on top then place a lid on the pan. Bake in the oven for 35 minutes. Then remove the lid and bake for a further 10 minutes, or until all the liquid is absorbed and the rice is tender (so 45 minutes in total).
  • Remove from the oven and allow to rest for 5 to 10 minutes before serving, garnished with parsley or oregano .

I made this dish just before posting, which is how I added step by step.

I made enough for 2 sons and my daughter and even allowed 2nds . Well my daughter came home from work at 9pm and asked where the chicken was , when I looked in the pan there was maybe a tablespoon of rice
The next morning my 20 year old said how delicious it was and that he had 3 servings he said he couldn't stop eating it.
He then hugged me and said thanks for being the best mum and cooking such delicious food.
His sister was so kind to him the next day. Lucky my other son ate as soon as it came out of the oven

I think a Coonawarra Cab Sav 2017 vintage should fit the bill nicely.
I'm not a purist who says "White meat = white wine", I have what I like to have and no rules implied or followed, the pairing should be fine . 🍷🐓

Thats going on my to do list, Suzanne. By the way I tried beetroot ice-cream, liked the flavour but wasn't a fan of the texture. It was fun to try it after dreaming about it all that time.
 
Super tasty.
I am going to try Semillon Sauvignon Blanc in place of lemons,
next time I do this recipe, and a strong garnish of fresh Coriander leaves.

But I made a mistake by adding too much{White Wine} Tip; DRINK more add LESS.

Then She complains "You don't listen it's in one ear and out the other"
My reply was, "No dear it's not even in one ear"
Then I can hear the TV {with no interruptions} ;)
It's all in good humour, a bit like the ADDAMS FAMILY. 👻

To be honest I love this recipe as is with no wine..

Are you sure your not my brother inlaw , your other half sounds exactly like my hubby's sister and I only told her on Friday how lucky she was that her hubby actually cooked 🤔

😂 Like the drink more wine and add less to the cooking. It reminds me of the joke-I tried cooking with wine but after the third glass I forgot where the kitchen was.😂😂😂
