I remember my nan either baking bread n butter pudding or Baked Rice Pudding on a Sunday
This one is for a Baked rice Pudding and recipe is so close to my Nan's

Ingredients
- 1-1/2 cups cooked rice
- 1/4 cup raisins
- 2 large eggs
- 1-1/2 cups whole milk
- 1/2 cup sugar
- 1/2 teaspoon ground nutmeg
- 1 teaspoon of vanilla essence
Directions
- Place rice and raisins in a greased small casserole or baking dish
- In a small bowl, whisk the eggs, milk, sugar, vanilla essence and nutmeg; pour over rice.
- Bake, uncovered, at 190 °C or 170 fan-forced for 45-50 minutes or until a knife inserted in the center comes out clean. Serve Cool or warm. Refrigerate leftovers
