1 ½ cups white sugar, divided
¾ cup/12 tbsps margarine
1 large egg
¼ cup molasses
2 cups all-purpose flour
2 teaspoons baking soda
1 tablespoon ground ginger
1 teaspoon ground cinnamon
½ teaspoon salt
Directions
First, preheat the oven to 175 degrees Celsius.
Then, grab a bowl and mix together 1 cup of sugar and the margarine until smooth. Beat in the egg and molasses until it's blended evenly. In another bowl, combine the flour, baking soda, ginger, cinnamon, and salt, and mix until it forms a dough.
Next, shape the dough into 1-inch balls and roll them in the remaining 1/2 cup of sugar. Place these sugar-coated balls on an ungreased baking sheet, making sure to leave 2 inches between each one.
Then, bake the gingersnaps for 8 to 10 minutes. When they’re ready, slide the cookie sheet out of the oven, and allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
