Garlic Prawn Pizza Bread

It's Garlic Prawn Pizza Bread – and yes, it’s every bit as delicious as it sounds! Ingredients:
1. A quarter cup of extra virgin olive oil
2. Eight garlic cloves, bruised
3. A cup of flat-leaf parsley leaves
4. Two teaspoons of grated lemon zest
5. 450 grams of fresh ricotta
6. Half a cup of grated parmesan, plus some extra to sprinkle
7. A baguette, split, or 2 large pizza bases
8. 800 grams of prawns, peeled, halved if large
Start by preheating the oven to 220 degrees Celsius and lining a baking tray with baking paper.
Then, heat some oil in a pan over low heat before adding the garlic. Let it sauté for 2 to 3 minutes to bring out its flavours. Remove the garlic cloves (not including the oil), then place them in a food processor with parsley and zest. Reserve a quarter of the mixture, then add the cheese to the remaining mixture and pulse to combine. Spread the ricotta mixture over the baguette or pizza bases.
After that, heat a pan over medium-high heat. Using the reserved garlic oil, sauté the prawns and cook for a minute on each side or until just cooked. Remove the pan from the heat, then add the reserved garlic and parsley mixture. Gently toss to combine. Arrange the prawns over the baguette or pizza bases before sprinkling them with extra parmesan. Bake for 5 to 6 minutes or until the cheese has melted.
