Fricken' Fabulous Frittatas

I love a good frittata, and this recipe is terrific for using up any leftover vegetables you might have. It's also a great way to get some veggies into your breakfast, lunch, or dinner!

Cheap, healthy (assuming you go easy on the cheese), and very tasty. What's not to love?

Ingredients:

8 eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 cup chopped onion
1/4 cup chopped green capsicum
1/4 cup chopped red capsicum
1/4 cup chopped mushrooms
1/4 cup chopped broccoli
1/4 cup chopped tomatoes
1/4 cup shredded cheddar cheese

Instructions:

1. Preheat oven to 175 degrees C (350 degrees F).
2. In a large bowl, whisk together eggs, milk, salt, black pepper, thyme, basil, and garlic powder.
3. In a separate bowl, mix together onion, green capsicum, red capsicum, broccoli, mushrooms, tomatoes, and cheddar cheese.
4. Pour vegetable mixture into the egg mixture, and stir gently to combine.
5. Pour mixture into an oven-safe baking dish.
6. Bake in the preheated oven for 25 minutes, or until set.

There you have it! Quite a long ingredient list, but of course you can swap out or remove most of them and still end up with a very tasty and healthy dish.

@Ricci I wish I had the same problem... I guess at some point I've been conditioned to think of a meal not truly being a meal unless there is some meat (or at least meat-y) component to it. I'm really trying to shake this, because I want to eat less meat for my health and for the environment.

I usually eat meat (pork or chicken) only 2 or 3 times a week, fish 1 or 2 times and the rest veggies, salad, fruit etc. A favourite is a variety of steamed veggies covered in a cheese sauce, or mixed veg stirred through pasta with a tomato based sauce.
