Fresh Beetroot Salad

My sister inlaw shared this recipe with me years ago.
What I have found interesting with The Greeks they pretty much find a use for everything.
With this salad you also use the leaves on the beetroot plant.

Prep Time: 10 minutes
Cook Time: 1 hour 15minutes minutes

Ingredients​

  • 500 grams fresh Beetroots
  • 2 shallots chopped
  • a small bunch of continental parsley flat one
  • 2 garlic cloves minced
  • 6 tablespoons olive oil extra virgin
  • 4 tablespoons red wine vinegar

Instructions​

  • 1. Separate the beetroots from the stems and leaves. Rinse them well.
  • 2. Cut the stems into smaller pieces about 5cm long.
  • 3. Half fill a cooking pot with water. Season the water with salt and bring to a boil over high heat.
  • 4. Fill a large bowl with very cold water and keep next to the pot.
  • 5.Dip the beet leaves in the hot water and cook for about 2 minutes. Then remove them using a slotted spoon, and transfer them to the bowl with the cold water. Once cold, transfer them to a strainer and let them drain
  • 6. Once the water in the pot gets to a boil again, add the stems and cook them for 8-10 minutes or until softened. Transfer to the bowl with the cold water as well. And just like you did with the leaves, once they have cooled, transfer to the strainer to drain
  • 7.In the same pot, add the beetroots (without peeling them) and bring it to a boil. Reduce heat to medium and simmer, partly covered for about 50 minutes to 1 hour, or until when you prick a beetroot with a knife feels tender enough.
  • 8 . Change the water in the bowl with some cold one and add the beetroots. Let them cool completely. Then using a knife, cut off a thin slice from their bottom and with your hands rub off the remaining of their skin. It will come off easily and you don't have to use a knife to peel it. Transfer the cleaned beetroots on a cutting board.
    9. Cut them into small cubes about 2 cm pieces and then add to a large salad bowl.
    Add the beetroot stems and leaves to the bowl as well.
    Finely chop the parsley, and shallots and add to the bowl along with the red wine vinegar, olive oil, and minced garlic.
    Season with salt and pepper and mix very well.
    Ideally, let this salad sit for half an hour before serving. It gets even more flavorful the more it sits!

I want to make this salad to take to my sons on Sunday but is impossible to buy any beetroot atm , fresh or canned although canned I only use edgell or Golden circle 😡
No fresh bunches in the supermarket? I buy canned Edgell or Three Three's beetroot. None on the shelves.
Not sure what Aldi has, but probably the same.

Apparantely there is no one to process the beetroot as the cannery closed Down in Cowra or something. One farmer has tonnes but no one to process it so he is ploughing it back in the ground.just looked it up.😊

That's no good! I know Woolworths brand is Australian as well. Try the fruit shop for a bunch of fresh ones.

Yeah all we can do is wait it out I guess.😊i just looked up online you can still buy it but looks more expensive. Woollies essential beetroot is New Zealand grown. Depends if your desperate for it I’m not.😊I can live without it for awhile.😊

Yes, so true! My wife got the last two tins of Edgell beetroot on Wednesday! I tried to get some today at Aldie - They had some Aussie grown beetroot tins a few weeks ago..... but alas only had two slabs of just about untouched Chinese imported tins! Looks like tins of beetroot are the new "toilet paper" supply item!
 
Yes, so true! My wife got the last two tins of Edgell beetroot on Wednesday! I tried to get some today at Aldie - They had some Aussie grown beetroot tins a few weeks ago..... but alas only had two slabs of just about untouched Chinese imported tins! Looks like tins of beetroot are the new "toilet paper" supply item!
Apparantely there’s about 30 suppliers around Australia that grow it but it’s seasonal so maybe it’ll be available again later in the year.🤔

Beetroot is not really seasonal in most parts of Oz..... here in Melbourne beetroot can be grown nearly all year round! I think that- for good reasons!- beetroot has gained a lot in popularity over recent times and the growers are slow in picking up on the extra demand! I, for one have plans in train to grow my own, as they are a very easy and hardy crop to establish - even the leaves on top are a healthy, tasty "green " to eat in a salad [young leaves] or as a steamed vegetable! If space is limited - grow them in containers!

I read that it’s sweeter at certain times of the year so that’s when they mainly pick it. In the cooler months of Spring and autumn. Hence the seasonal comment.😊
