French Tuna Salad

Summers coming and in Sydney we have already been having days of 36 plus and with temperatures rising there is nothing better than a good salad.

I'm going to share a couple of my family's favourite.

Ingredients​

  • 8 baby potatoes
  • 120g green beans trimmed
  • 2 tomatoes , each cut into small wedges
  • 1/2 baby cos lettuce , cut or torn into large bite size pieces
  • 3 hard boiked eggs, peeled and quartered
  • ¾ cup/ 100g pitted black olives
  • 250 – 300g canned chunk tuna in oil , drained and broken into large chunks

LEMON DRESSING:​

  • 1 1/2 tbsp lemon juice
  • 4 tbsp extra virgin olive oil
  • 1 small garlic clove , minced/grated
  • 1/4 tsp salt
  • 1 tsp Dijon mustard
  • Pinch black pepper

METHOD

Instructions​

  • Dressing: Shake ingredients in a jar.
  • Cook ptoatoes: Boil potatoes until tender. Drain and leave to fully cool. Slice into halves.
  • Blanch beans: Boil green beans until tender or done to your liking. Drain and refresh under cold running water to quickly cool. Drain, pat well to dry.

ASSEMBLE THE SALAD:​

  • Arrange the cos leaves on a large, wide plate.
  • Scatter and layer the remaining ingredients artfully around the plate, finishing with the eggs, olives and chunks of tuna. Drizzle with dressing over and serve!

Recipe Notes:​

1. Potatoes – Regular potatoes, peeled and chopped into chunks or slices are totally fine too.

Variations:
– Add other seafood eg prawns calamari.
– Other vegetables you can : Cucumber, capsicum, artichokes, broad bean , red onion, shallots, radishes. Soft herbs are also can be included such as parsley or basil.

That looks so yummy, can't wait for the warm weather to get here, I love salads.
Weather here in in WA is still a bit all over the place. A few days ago it was 34, the night before last it was 2 degrees.
I eat salads all year round😁why wait for hot weather😁

Yes I have lived in Mona Vale for 42 years next month. Wedding anniversary on 6th November - we'll probably get take away Chinese or go to Modus Brewery for lunch which is dog friendly as my husband has the most spoilt/pampered dog who cannot be anywhere without him - big and black and named Zorro.
