Ingredients:
30g butter
200g button mushrooms, thinly sliced
3 green shallots, finely chopped
120g baby spinach
2 x 200g tub French onion dip
125ml (1/2 cup) pouring cream
1 barbecue chicken, skin and bones removed, meat shredded
450g packet microwave basmati rice, warmed
80g (1 cup) coarsely grated mozzarella
80g (1 cup) coarsely grated cheddar
Instructions:
1. In a large, deep frying pan, melt butter over high heat. Add mushrooms and 3/4 of the chopped shallots. Cook for 2 minutes, occasionally stirring, until softened. Add spinach and stir until wilted. Add the dip, cream, and chicken and bring to a simmer. Season.
2. Preheat the oven to 180 degrees celsius. Spoon the rice into a 1.5-litre (6-cup) baking dish. Add the chicken mixture on top and sprinkle with mozzarella and cheddar cheese.
3. Bake for 20-25 minutes or until the cheese is golden. Top with remaining shallot to serve.
Optional ways to make this dish extra special:
-Add sliced garlic and thyme to the chicken mixture for extra flavour.
-Top with some crispy bacon bits for a crunchy texture.
-Sprinkle with some freshly chopped parsley or chives.
