Fish with Herb Dressing

I love giving my family variety and I love quick dishes for when I'm tired and don't feel like cooking.
This meal will be on your plate within 30 min and is Restruant quality

Ingredients
12 baby potatoes new, halved
4 medium zucchinis quartered ( I cut in 1/2 then 1/2 length ways)
2 tablespoons olive oil
4 white fish fillets ( 800g)
2 medium ripe egg tomatoes chopped
2 tablespoons lemon juice
1 tablespoon finely chopped fresh dill or parsley
2 tablespoons Fresh basil chopped
Method
1. Boil or steam potatoes and zucchinis separately until tender, drain
2. Meanwhile, heat half the oil in a large non stick frypan. Cook fish until white inside. Remove from pan, cover to keep warm
3. Heat remaining oil in the same cleaned pan; cook tomatoes and juice, stirring 2 minutes. Remove from heat. Stir in herbs
4. Divide fish and vegetables among serving plates, drizzle with tomato mixture

I use white fish like perch, ling or barramundi. I have also used basa but I like using thick pieces for this recipe
