One of the easiest and quickest meats to make is fish.
Serve it with Salad or steamed vegetables.
Ingredients
1 large cleaned fish ( this one I scaled and gutted)
1 tablespoon butter
2 tablespoon olive oil
1 tablespoon either fresh or dried parsley
Juice of 1 lemon
Optional salad or vegies . I served potatoes, carrots and pumpkin roasted in the oven and served with cherry tomatoes and baby spinach from the garden.
Method.
1 Heat oil in large frypan, then add butter.
2. wipe the fish with paper towel. Using a sharp knife make 4 slits across the fish.
Then salt n pepper the fish. Add to pan.
3. cook for 5 minutes , pressing the fish down with a spatula or egg lifter after 2 minutes.
Turn fish and pour juice from 1 lemon over the fish. Cook for another 5 minutes or until fish is cooked. ( don't over cook)
Serve with an arrangement of fresh salad and vegetables
