Easy Salmon Tray Bake

I made this dish the other day. It was so quick and everyone loved it.

I purchase 1kg of coles frozen salmon for $29 works out $3 a piece.

It Defrosts quickly.

This one serves 4 although hubby wanted seconds

Prep 5 minutes Cooking time 25 min

INGREDIENTS
  • 8 baby potatoes unpeeled cut into 1cm-thick slices

  • 250g cherry tomatoes

  • 2 tsp olive oil

  • 4 x 150g skin-on salmon fillets

  • 50g (1/4 cup) kalamata olives optional

  • 1 tbsp drained baby capers

  • 1 lemon, rind finely grated

  • 1/3 cup small fresh basil leaves

  • MIX salad leaves ot tossed salad , to serve

Method :

  • Step 1
    Preheat the oven to 200C/180C fan forced. Evenly arrange the potato over base of a large baking dish. Evenly scatter with the cherry tomatoes. Drizzle over the oil then bake for 15 minutes.

  • Step 2
    Arrange the salmon, skin-side down, in the dish. Sprinkle with the olives, capers and lemon rind. Season well. Bake for a further 10 minutes.

  • Step 3
    Scatter with the basil. Serve immediately with the mixed salad or salad leaves.
