Easy Salmon Parcels

Ingredients​

  • 4 salmon fillets ( around 125g each)
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon-pepper seasoning
  • 1 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1 small onion, cut into rings
  • 2 medium tomatoes, chopped

Directions​

Preheat oven 180°C or 160°C fan-forced
  1. Place each salmon fillet, skin side down, on a double thickness of heavy-duty foil (about 18x12 in.).
  2. Combine the garlic powder, lemon pepper, curry powder and salt; sprinkle over salmon.
  3. Top with onion and tomatoes. Fold foil over fish and seal tightly.
  4. place foil packages on a tray and cook in oven for 15 minutes or until fish flakes easily with a fork. Open foil carefully to allow steam to escape
  5. Serve with steamed vegetables of choice

A different spin to the way I cook salmon but this looks delicious and so easy - I have passed this recipe on to my daughter - thanks Suzanne :)
