Easy Puttanesca

What better dish for a delightful dinner than a classic-inspired Puttanesca? This dish is a beloved classic, promising a burst of flavours to nourish your body and soul!

Ingredients

300g of your favourite spaghetti

1 tbsp of heart-healthy olive oil

One scrumptious onion, finely chopped

2 garlic cloves (to keep the vampires away!)

1 chilli, deseeded and finely chopped (adjust to taste)

1 tbsp of vibrant tomato purée

425g can of sardines in oil

70g pack of dried black olives with herbs, roughly chopped

A generous sprinkle of shaved Parmesan to serve!

Directions

Set your pasta to boil according to the pack instructions, stirring occasionally to avoid a sticky situation. Meanwhile, heat the olive oil in a non-stick frying pan and gently cook the onion, garlic, and chilli for 3-4 minutes until they soften.

Once they have softened, stir in the tomato purée and sauté it for about a minute, then introduce your sardines along with their sauce. Here comes the fun part—use a wooden spoon to break up the fish while it simmers with the other ingredients. Once you've achieved a chunky paste-like consistency, it's time to toss in those olives and continue to cook for a few more minutes.

Drain your al dente pasta. Don't forget to save 2-3 tbsp of the pasta water! Next, combine it with the pan of your sardine mixture. Toss everything together gently to ensure the pasta is well-coated with all these gorgeous flavours.



Once done, you're ready to serve up this masterpiece. Distribute the pasta equally onto plates, and finish it off with a generous sprinkle of shaved Parmesan.
