I have found a long life dairy farmers cream from Coles that I now keep in the fridge for those times I want to make eg mushroom sauce.
I do a couple of variations but this one's a fast an easy one and very delicious.

Ingredients
1 teaspoon oil or butter
175g button mushrooms, finely sliced
2/3 cup ( 150ml ) cream
1/2 teaspoon salt
1/2 teaspoon pepper
2 cloves of garlic, crushed ( optional)
Method
1. Heat a saucepan over medium heat and melt butter or heat oil.
2 . Add mushrooms and saute until golden brown.
3 . Reduce heat. Add cream and season with salt and pepper. Bring to the boil. Then simmer for 5 minutes. Be careful cream does not overboil.
4 . Simmer stirring until the sauce reduces by half. Add garlic, if using and cook for 1 minute.
5 . Remove from heat and serve.
