Anyone who reads my recipes know I LOVE quick but tasty recipes and one tray bakes and this is one of them and also great on the budget.

If you don't like pumpkin then use sweet potato

Ingredients
- 8 chicken drumsticks or thigh cutlets
- 500g Kent pumpkin, unpeeled, cut into wedges or sweet potato peeled cut into chunks
- 1 brown onion, cut into wedges
- 227g can water chestnut slices, drained
- 1/2 cup hoisin sauce
- 1 tbs soy sauce
- 1 1/3 cups jasmine rice
- 2 shallots, sliced diagonally
Method
- Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper.
- Place chicken, pumpkin, brown onion and water chestnuts on prepared tray. Combine hoisin sauce and soy sauce in a small bowl, then pour over chicken and vegetables. Turn to coat.
- Bake chicken and vegetables for 70 minutes, basting with sauce during cooking, or until chicken is browned and cooked through.
- Meanwhile, cook the rice following packet directions.
- Sprinkle chicken and vegetables with shallots Serve with rice.
If you don't like pumpkin then use sweet potato
