Easy Greek Salad

We must make this at least 4 times a week. It just goes with everything.

Serves 4

Ingredients​

  • 4 large ripe tomatoes , cut either into small pieces or wedges I do both
  • 2 thinly sliced cucumbers ( I use Lebanese)
  • 1 small red onion, halved and thinly sliced
  • 1/4 cup olive oil
  • Pinch of salt
  • pepper to taste
  • 1/2 teaspoon dried oregano, optional
  • 100g pitted black olives ( I use kalamatta)
  • 150g feta cheese cut into small cubes ( I use lemnos brand)

Directions​

  1. Place tomatoes, cucumbers onion and 3/4 of the olives in a large bowl.
  2. Drizzle oil over salad; toss to coat. Top with remaining olives , fetta cheese and sprinkle oregano on top

Have to break out the Mandoline!! This a Salad either Greak or a Waldorf salad. I used to order with CoffinBay oystars. Absolutely madig.

What would we use to replace cucumbers? I like them but are a no-go for Veggie. I’ve made salads similar to yours….so fresh and delicious. 😋
