Easy Greek Salad

We must make this at least 4 times a week. It just goes with everything.

Ingredients
- 4 large tomatoes, cut either into small pieces or wedges I do both
- 2-1/2 cups thinly sliced cucumbers ( I use Lebanese)
- 1 small red onion, halved and thinly sliced
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar ( optional) I don't use often
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon dried oregano, optional
- 3/4 cup pitted Greek olives ( I use kalamatta)
- 3/4 cup crumbled feta cheese ( I use lemnos brand)
Directions
- Place tomatoes, cucumbers onion and 3/4 of the olives in a large bowl.
- In a small bowl, whisk oil, vinegar, salt and pepper until blended. Drizzle over salad; toss to coat. Top with remaining olives , fetta cheese and sprinkle oregano on top
